  1. Preheat the oven to 400f. Prick the aubergines all over with a fork or skewer, then place them on a baking sheet.
  2. Roast the aubergines for about an hour and a half, until they are darkened and shrunken-looking.
  3. Leave the aubergines to cool, then scrape the flesh into a food processor. Add the remaining ingredients and blend until smooth. Taste for salt, and add more if necessary.
  4. Serve with warm pita bread. Sprinkle with a little more paprika and drizzle with olive oil if desired.
